Miso Goma Lemon Udon

1 block / FROZEN (or DRIED) UDON
2 tbsp / WHITE SESAME SEEDS
1 1/2 tbsp / MISO (any miso from medium to dark color)
1/2 / ORGANIC LEMON (1 tbsp JUICE and SKIN)
1/2 cup / ARUGULA


  1. Roast sesame seeds and ground.
  2. Peel lemon skin and chop into small pieces.
  3. Mix sesame, miso and lemon juice.
  4. Cook udon in boiling water. (Follow instruction on package) Drain and add into mix.
  5. Add lemon skin and arugula into mix. Stir gently.

notes:

  • Self-roasted sesame has great flavor, but alternatively, skip Step 1 and use pre-roasted ground white sesame.
  • Use organic lemon because the skin is edible too.
